The dessert for the holidays
Ingredients for 6 people |

150 g digestive biscuits |
75 g butter |
300 g chocolate |
3 eggs at room temperature |
1 orange |
blueberries and berries to taste |
Method
Start by crushing the biscuits in a mixer until they are reduced to powder. Transfer them to a bowl and add the melted butter. Mix well and set aside.
Take a tray, cover it with a sheet of baking paper and place four pastry cutters with a diameter of about 7 cm and a height of about 6 cm on top. Place a few spoonfuls of crushed biscuits inside the pastry cutters and press well with the help of a spoon. Proceed in this way for all 6 single portions. Transfer the bases to the fridge for 30 minutes.
In the meantime, prepare the chocolate mousse. Squeeze the orange juice, remove the zest and set aside.
Chop the chocolate coarsely, put it in a bowl and melt it in a bain-marie for a few minutes.
Remove the chocolate from the heat, add the orange juice and the egg yolks. Mix well with a whisk until the mixture is smooth.
Let it cool and, in the meantime, beat the egg whites until stiff. When the chocolate and orange mixture has cooled, add the egg whites a little at a time, mixing delicately with a spatula from the bottom up, so as not to deflate the mousse.
Start filling the pastry rings with the mousse, level and transfer to the fridge for 4 hours. Before unmolding the single portions of chocolate mousse, wait a few minutes, it will be easier to extract them. Garnish them as desired, finally add the orange peel.
